Steak and Cheese Subs

Dan and I have very different eating habits to say the least. 
Dan is a meatatarian and I'm well...anything but that...

Since we've moved in, Dan's had to suffer through more than enough "Lauren Meals"..so I decided to make a "Dan Meal." I think it turned out to be a success!

Even though I don't eat much steak, I'm a huge lover of steak and cheese subs.
I mean it is smothered in melted cheese after all...
You can't hate that!

Makes about 4 small subs

Ingredients:
  • 1/2 pound shaved steak
  • 1 small onion, diced
  • 1 green pepper, diced
  • 2 cloves garlic, minced
  • olive oil
  • 5 slices american cheese
  • small sub rolls
  • butter
Recipe:
  • In a pan, saute onion and peppers in olive oil
  • Add garlic to peppers and onion
  • Cook until tender
  • Remove veggies from pan
  • Add shaved steak and cook until browned
  • Drain excess grease from pan
  • Add veggies
  • Stir until combined
  • Add american cheese
  • Mix until well combined
  • In a separate pan, melt butter
  • Add sub rolls to pan and toast on each side until warm and buttery
  • Add steak mixture to sub rolls

Hot and Spicy Tuna Melt


Anyone that knows me knows that I LOVE spicy food. I found this tuna melt recipe and altered it slightly so that every part has some spice in it. Of course, if you're not a lover of spicy food you can swap out the ingredients for something more mild. Either way this is a really fun way to have a tuna melt. It makes a perfect lunch.

Ingredients:
  • 1 pita bread
  • 1 can tuna
  • 1/3 cup chopped celery
  • 1/8 cup chopped banana peppers (Swapping these out for pickles would be find if you are not a fan of spicy peppers.)
  • 2 tablespoons light mayo
  • 1/2 cup habanero cheese (I used cabot habanero cheddar cheese. Now, this stuff is potent even for a spicy lover. I'm warning you! You can always swap for regular cheddar cheese if the habanero scares you). 
  • Siracha hot chili sauce (You can find it in the asian section of your grocery store.)
Recipe:
  • Preheat oven to 400 degrees.
  • In a large bowl combine drained tuna, celery, banana peppers, and mayo
  • Take your pita and poke small holes throughout the pita with a fork. This will prevent the pita from bubbling up.
  • Spread the tuna on one side of the pita leaving a small border around the edge.
  • Sprinkle cheese over the tuna.
  • Place pita on a baking sheet and bake for about 10 minutes or until cheese is melted and edges are golden brown.
  • Remove from oven and cut pita into quarters.
  • Drizzle Siracha sauce on top and serve.

California Sandwich

 I originally found a picture of this sandwich on Pinterest with no recipe, so I created something that looked similar. You can alter this recipe based on your taste. It would also taste amazing with pepper jack cheese or in a wrap. The chive-goat cheese spread recipe below makes enough to probably put on 10-12 sandwiches. I always make more than needed because it tastes amazing with anything especially on bagels, or served with crackers or cut up vegetables. The chive-goat cheese spread is definitely what gives this sandwich great flavor! Yummmm!

Ingredients:
Sandwich:
8 slices of whole wheat bread
1 tomato
1/2 of a cucumber
1 avocado
sprouts

Chive-Goat Cheese Spread:
8 ounces fresh goat cheese, room temperature
4 ounces cream cheese, room temperature
6 tablespoons minced chives
1 garlic clove, minced

Recipe:
To make the vegetable mixture, cut up the tomato, avocado, and half of the cucumber into bite size cubes. Squeeze either lemon or lime juice on the mixture to prevent the avocado from browning.

To make one sandwich, take about 1/4 cup of Chive-Goat Cheese Spread and spread evenly on two pieces of bread. This spread will act as the glue for the ingredients inside. Place about 1/3 cup of the vegetable mixture on one slice of bread. Place a handful of sprouts on the other slice of bread. Close the sandwich together and enjoy!!
