Oreo Cookie Cupcakes

There are so many aspects of blogging that I love. Photography has definitely become one of them. I started to blog to showcase my recipes and share them with others. As I continued to blog, however, I began to realize how important pictures are! Now that school is over for the summer, I finally have some free time to learn more about my camera and take an online photography class. I'm so excited!!
Now to the recipe... I made these cupcakes for my coworkers and they loved them! I wanted to do something fun yet simple enough that everyone would love them! Who doesn't love an oreo cookie?! I love how the cookie crumbs are mixed throughout the cake and frosting.
Ingredients
Cake
Serving Size: Makes 24 cupcakes

  • 2-1/4 cups all purpose flour
  • 1-2/3 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1/2 cup (1 stick) butter, softened
  • 2 tsp vanilla
  • 3 egg whites
  • 10 oreo cookies
Frosting 
Serving Size: 2 cups

  • 1 stick butter
  • 4 cups confectioners sugar
  • 4 tbsp milk
  • 1 tsp vanilla extract
  • pinch of salt
  • 10 oreo cookies
Recipe
  • Preheat oven to 350 degrees.
  • Line 24 muffin cups with paper baking cups.
  • Combine flour, sugar, baking powder and salt in a large bowl. Mix well.
  • Add milk, butter and vanilla to the dry mixture. Beat at low speed for 30 seconds.
  • Beat at medium speed for 2 minutes.
  • Add egg whites, beat 2 minutes.
  • Crush 10 oreo cookies (I took the cream from the center out before crushing the cookies)
  • Stir in crushed cookies into the batter.
  • Spoon into muffin cups.
  • Bake for 20 minutes or until toothpick inserted into center comes out clean.
  • Let cool on wire racks.
  • While cupcakes are cooling, beat together butter, sugar, milk, vanilla, and salt.
  • Place 10 oreo cookies (without the cream in the center) into a food processor. Grind until oreo cookie crumbs are fine.
  • Mix oreo cookies crumbs into the crosting.
  • Frost cupcakes. Sprinkle with any additional crushed cookies or with colored sprinkles!

St. Patrick's Day Dirt Pudding

So its a little snowy outside today. We got about 20 inches of snow when we were only suppose to get 4-6 inches. Gotta love it haha.

Even though snow can be annoying, it is still pretty.
So since I was stuck inside, I wanted to make something special and found this pistachio pudding. How perfect for St Patrick's Day! I would have loved to add whipped cream on top, but I was not going to venture out in the snow hahah.

This recipe was so simple. Make a box of pudding according to the directions on the box. Take a bunch of oreos (or your favorite cookies) and crush them up. Layer the pudding and crushed cookies, and there you go!! One box of pudding made about 3 martini glasses.

Oreo Cookie Stuffed Brownies


What?! Am I actually planning ahead for a holiday? I know its shocking...I may even have a couple patriotic drink recipes and post them this weekend too. No promises though!

I found these "brownies" on pinterest and couldn't pass them up. They are unique because they are not entirely brownies (hence the quotation marks). They are actually oreo stuffed brownies with a cookie bottom. These brownies are unique, delicious, super easy to make, and perfect for a cookout! They are pretty heavy so I would consider cutting them in to small pieces! I sprinkled red white and blue sprinkles on top of the brownie mix to make them patriotic.

Ok...and I suppose I should tell you that I slightly cheated with this recipe. All of the ingredients were made from a box hehe. All you need is a box of brownie mix, a box of oreos, and premade cookie batter. They would probably taste even more delicious if you made brownie and cookie batter from scratch but I was lazy!!

Recipe:

Line a 9 x 13 pan with parchment paper, then spray with pam. Take the chocolate chip cookie dough and press it into the bottom of the pan. I believe I used a little over half of the cookie dough from the package. Take about 30 oreos and place on top of cookie dough layer.

At this point it, the pan should look like this:
Then, make brownie batter according to package. Pour brownie batter on top of Oreos. At this point, you can cover batter with your favorite sprinkles. Bake at 350 degrees for 50 minutes.

They should come out of the oven looking like this:
Cut into squares and enjoy!!
